The lamb of Sisteron, a favorite of local specialties, as well as our menu, is exclusively from local hardy breeds (Merinos of Arles, Mourerous, and Southern Alps), its meat is characterized by its light color, its softness and its exceptional tenderness. Thanks to this, ill has been awarded a Red Label since 1995 and an IGP since 2007.

Then another regional specialty are calissons and nougats Canteperdrix.
These small candies made from almonds, candied fruit, white diamond shaped sugar with a delicious iced sugar bill called “cali soun” (small hugs). Canteperdrix nougats are white or black with lavender honey, almonds, pistachios and pine nuts

To continue, the apple of the Alps is another emblem of the region. It benefits from the Red label and an I.G.P, the climate of the Alpes de Haute-Provence conferring to the fruit a sugar content and increased acidity.

Finally, olive oil also occupies the front of the culinary scene: cold pressed, it has a beautiful yellow-green dress so special and the taste of the soil where grow the olive trees. It benefits from an A.O.C in the Alpes de Haute-Provence department.
